Grapefruit and Tarragon Collins
The Tom Collins, named after an infamous prank in 1874 New York, is an iconic gin cocktail.
This version is a refreshing summer cooler, mixing the tart pink grapefruit with the aniseed notes of tarragon and topped up with some citrus fizz from the Pink Citrus Tonic from Artisan Drinks.
Perfect for a summer afternoon in the garden!

Brancaster Gin (50ml)
Fresh tarragon (3-4 blades)
Light brown sugar (1 tsp)
Pink grapefruit juice (75ml)
Pink Citrus Tonic from Artisan Drinks
Muddle the tarragon and sugar in a cocktail shaker, add ice cubes, Brancaster Gin and grapefruit juice and strain into long glass full of ice. Top up with tonic and garnish with tarragon and a slice of pink grapefruit.
